Cassava Cake


500 g grated cassava

2 large eggs, beaten

1 can 170 gm evaporated milk

½ cup white sugar

2/3 can of 395 gm sweetened condensed milk

2 cups coconut milk

¼ cup melted butter


1/3 can of 395 gm sweetened condensed milk

½ cup coconut milk

2 tbsp melted butter

Grated cheddar cheese (optional)


1.Beat together eggs, evaporated milk and sugar.

2. Add condensed ,coconut milk and butter, mix well.

3. Add grated cassava over the mixture and mix well.

4. Transfer to a buttered baking dish, bake in a 350 degrees. preheated over for 30 minutes.

5. Prepare the toppings mixture while baking the cake, combine condensed, coconut milk and butter.

6. When the cake is done, spread the milk mixture on its surface, return to oven and bake for 25 minutes or until slightly brown.

7.(optional) Then drizzle with grated cheese. Cool for at least 5 minutes before serving.

and Enjoy warm or cold !!!!

Fresh Moringa Leaf and Beans Soup

Use this as a tasty side dish with any compatible entrée.

1 cup of beans, mung beans is used in the Philippines but you may substitute lintel beans, baby limas, red beans or pintos.
2-3 cups of water
1 cloves of garlic, crushed
1 small onion Chopped
1 medium tomato Chopped
1 cup fresh Moringa leaves
½ teaspoon of fresh shredded Ginger
½ of a sliced red bell pepper
½ of a sliced green bell pepper
Salt and pepper to taste.

In a 4 quart pan boil the beans until tender.
While the beans are boiling, sauté the onions, red and green bell pepper, garlic and tomato in a saucepan.
When beans are tender add the tomato, onion, garlic to the beans.
Strip the Moringa leaves from the stems, remove any excess stems from the leaves. Add fresh Moringa leaves.
Cook an additional 1 to 2 minutes
Salt and pepper to taste.

Note: you can also add cooked shrimp , chunks of fish, small chunks of cooked pork, even chopped up pieces of fried bacon to add even more content to the dish

Serve as is or over steamed rice And Enjoy.


This is a twist for a Moringa and Corn soup

2 gloves garlic, crushed
1 small onion, chopped
1 and 1/2 Tbsp shrimp paste
1 Tbsp vegetable oil for sauteing
1 cup shredded sweet corn, keep the husk
4 cups pork stock, if you don't have this, you can always use 1 pork cube instead
2 cups moringa leaves
fish sauce (optional depending on taste)

In a saucepan, heat oil and start browning the garlic, add onion and saute until translucent.

Add shrimp paste and stir for 2 minutes.

Add water, shredded corn and husk. Bring to boil and simmer for 15 minutes.

Remove the the corn husk and add moringa leaves. Simmer for 1 minute.

Turn off heat. Using a stick mixer or blender, blend soup until leaves and corn kernels are blended. Bring back to simmer for another 2 to 3 minutes.

Turn off heat and serve hot.

This is a recipe for Sweet Potato Leaves Salad

1 bunch (around 300 gms) Sweet potato (Camote) Tops, washed, cut into bite sized pieces
4 large tomatoes, chopped
1 large onion, chopped
1/3 C rice vinegar (I used brown rice vinegar)
1 T sugar (or more if you prefer a bit sweeter taste)
salt and pepper to taste

1. Blanch the leaves in boiling water. Drain. Immerse in cold water bath. Drain again.

2. Mix the rice vinegar, sugar, salt and pepper together.

3. Arrange the sweet potato leaves on a platter. Top with tomatoes and onions. Drizzle with the vinegar-sugar mixture.

This is the basic salad recipe. For variation, we can add fruits such as mangoes, avocadoes or watermelon cubes.
